Here's a lively and unique version of classic cheese toast. It combines the zing of ginger and the succulence of apricots with a high-calcium cheese for a really nutritious snack.

Ingredients

  • 1 medium piece fresh ginger
  • 75 ml (1/3 c) dried apricots, sliced
  • 4 thick slices whole-grain bread
  • 120 g (1/2 c) grated cheddar
  • 1 small bunch arugula
  • 1 small bunch watercress
  • Lemon wedges, to garnish

Directions

Preparation time: 10 minutes. Cooking time: 5 minutes. Serves 4.

  1. Preheat the broiler to high. Cut the ginger into fine strips. Toast the bread slices on one side under the broiler. Flip the slices and lay them close together in the broiler pan.
  2. Scatter the ginger and apricots evenly over the bread, then sprinkle with the cheese right up to the edges. Toast for five minutes, or until the cheese is bubbling and golden.
  3. Divide the cheese toasts among four plates and serve with the arugula and watercress leaves garnished with lemon wedges.

Try something different

  • To help you get your seven servings of fruit and vegetables per day, dice an apple and add it to the toast along with the ginger and apricots.
  • To mix up the taste, leave out the ginger and use 50 ml (1/4 cup) chopped dates instead of the apricots.
  • Try different cheeses, such as your favourite melting cheese, or goat's cheese or crumbled feta instead of cheddar.

Cook’s tips

  • Adding the topping to the untoasted side of the bread means that the crusts do not burn before the cheese has melted. The result is a crisp base with a moist top.
  • Instead of grating the cheese, pare off thin slices using a potato peeler to get a more even covering.
